Happy St. Patrick’s Day!

I know some of you (or most of you) celebrated it on Saturday, but here’s to the real day! 🙂

Number three on the list is to make a Leprechaun Parfait.

I do not remember where I found the original recipe. It is quite easy to remember, so I just memorized the ingredients, and procedure and I was done.

Leprechaun Parfait (makes 1)

– Two vanilla pudding Cups
– Green food coloring
– Lucky Charms cereal

Mix food coloring in to each vanilla pudding cup separately. Mix until thoroughly green.
Empty one vanilla pudding cup into glass (we did it fancy with wine glasses)
On top of the pudding, sprinkle on a layer of Lucky Charms cereal (we used the St.Patrick’s Day Edition with just green clovers – plain Lucky Charms is fine also)
On top of the cereal, empty out the second vanilla pudding cup
To finish off, sprinkle on one last layer of Lucky Charms cereal.

Ta da! See! Easy right? I mean, please – I’m lazy… I do things the easy way.

From both John and I, we give it 4 out of 5 stars.

For next year, we’re thinking lime jello and some cool-whip. But for now this is a great way to celebrate the day!
